Recipe Roundup: Healthy Camping Foods

Eating healthy can be tricky when you’re surrounded by classic camping treats like hotdogs and s’mores. We’re not saying don’t indulge if you want. But if you’re trying to stick with a healthier diet, check out these mix-and-match recipes below.

All of these recipes are made using foil pouches, so it’s the only product you’ll need (with the exception of a knife to cut.) You can even combine these healthy camping foods into one pouch and make it that much easier!

Rosemary Garlic Potatoes

Ingredients: olive oil, rosemary, garlic, and new potatoes + salt and pepper

  1. Chop rosemary and garlic into very small pieces and set aside
  2. Cut new potatoes into 1-inch chunks and add to foil pouch, along with rosemary and garlic
  3. Toss with olive oil, sprinkle with salt and pepper, and seal pouch
  4. Roast over the fire until fully cooked

Jerk Chicken

Ingredients: chicken breast, Jamaican Jerk sauce

  1. Prepare chicken however you want by either slicing into strips, cutting into chunks, or leaving whole
  2. Add to foil pouch
  3. Toss with Jamaican Jerk sauce and seal pouch
  4. Cook over fire until chicken is cooked throughout

Veggie Fajitas

Ingredients: olive oil, zucchini, bell peppers, onions, corn, tortillas + salt and pepper

  1. Slice zucchini into chunky medallions
  2. Cut bell peppers and onions into long, thin strips
  3. Add to foil pouch, along with corn
  4. Toss with olive oil and sprinkle with salt and pepper
  5. Close pouch and cook until veggies are cooked, but still crunchy
  6. Add veggies to the tortillas and enjoy!

Corn On The Cob

Ingredients: olive oil, corn on the cob + salt and pepper

  1. Add corn on the cob to foil pouch
  2. Coat with olive oil and sprinkle with salt and pepper
  3. Seal pouch and roast over the fire

Roasted Spicy Chickpeas

Ingredients: olive oil, can of chickpeas, hot sauce + salt and pepper

  1. Add chickpeas to foil pouch
  2. Toss with olive oil and hot sauce
  3. Add salt and pepper
  4. Close the pouch and cook over the fire until chickpeas and crispy

Note: you will need a can opener for this recipe

Salmon With Lemon And Thyme

Ingredients: olive oil, lemon, thyme, salmon + salt and pepper

  1. Chop thyme into small pieces
  2. Add salmon to foil pouch
  3. Coat with olive oil, then sprinkle on thyme, lemon juice, salt, and pepper
  4. Seal pouch and cook over the fire until salmon is fully cooked

Asparagus

Ingredients: olive oil, balsamic vinegar, asparagus + salt and pepper

  1. Cut thick ends off of asparagus
  2. Add to foil pouch
  3. Toss with olive oil and balsamic vinegar
  4. Sprinkle with salt and pepper
  5. Close pouch and roast over the fire until cooked, but crispy
